Recipe: Apple Cinnamon Bake

Apple Cinnamon Bake: Serves 8 (Each 1/2 cup serving has 100 calories, 170 mg of sodium and counts as 1 carb choice.)
This delicious bread pudding will satisfy any sweet tooth while still providing key nutrients like calcium, potassium and whole grains. Add raisins, dried cranberries or chopped nuts for variety. For a special treat, serve with sugar-free vanilla frozen yogurt. Leftovers can be refrigerated for up to 4 days or frozen for 2 months.

- baking dish - 9x9 inch
- medium mixing bowl
- measuring cups

- whisk

- food thermometer
Ingredients:
- 2 eggs
- 1 c. reduced fat milk
- 1 Tbsp. brown sugar substitute
- 1 tsp. vanilla
- 1 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 4 slices whole grain bread, crust removed
- 2 medium apples - peeled, cored & diced small
- cooking spray
- 1/2 c. raisins, dried cranberries, walnuts, pecans, or almonds (optional)
Instructions:
- Preheat oven to 350°F. Prepare a 9 x 9 inch baking dish with pan spray.
- In a medium bowl, whisk egg, milk, brown sugar substitute, vanilla, salt, and cinnamon.
- Combine bread, diced apple, and optional ingredients (if using) in the baking dish.
- Pour egg mixture over bread and apples.
- Bake 35 - 40 minutes or until the temperature measures 160°F with a food thermometer.
