Recipe: Ham and Broccoli Bake

This simple casserole can be made 1-2 days ahead and refrigerated until ready to bake. It is a type of “strata”, or layered dish of meat, cheese and bread with an egg and milk sauce. Even though this casserole contains eggs, it can be served for any meal. Try different vegetables like peppers, mushrooms or tomatoes for variety.

Ingredients

  • 1 c. broccoli pieces, fresh or frozen (thawed) 
  • 1 c. lean ham,cubed
  • 2 c. French bread, cubed 
  • 2 Tbsp. margarine,melted
  • 1 c. cheddar cheese, shredded 
  • 3 eggs
  • 1 c. low fat milk 
  • cooking spray

1.       Preheat oven to 350°F. Prepare a 9 x 9-inch baking dish with pan spray.

2.       Mix milk and egg in a medium bowl.

3.       In a large bowl, pour melted margarine over cubed bread. Stir to coat.

4.       Layer bread, ham and broccoli in the baking dish. Pour egg mixture over the top and sprinkle with cheese.

5.       Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 15-20 minutes or until temperature reaches 165°F.
