Recipe: Braised Green Beans

This recipe is a simple way to dress up plain green beans. The shallots and vegetable broth add savory notes and the earthy flavors of thyme complement the green beans. Shallots are like onions, but milder in flavor. Onions can be substituted if shallots are not available. Green beans contain fiber, many nutrients and are very low in calories and carbohydrates.

This recipe comes to you from Chef Beth at Caregivers Kitchen.  It makes four 1/2-cup servings; each serving supplies 1/2 carb choice, 80 calories and 200 mg of sodium.

Ingredients

  • 1 lb. fresh or frozen green beans
  • 1 Tbsp. olive oil
  • 1   Tbsp. shallot, minced (or onion)
  • ¾ c. reduced sodium vegetable broth 
  • 1 tsp. dried thyme

1.       If using fresh green beans first wash, trim the ends and cut into pieces. Thaw frozen green beans.

2.       In a medium saucepan, sauté the shallots in olive oil until golden brown.

3.       Add the green beans, vegetable broth and dried thyme. Cover with the lid cook over medium heat until the beans are tender, about 15 minutes.
