Recipe: Cookies and Cream Parfait

This easy-to-make parfait puts a finishing touch on any meal. Mix it up with other flavors of pudding or cookies. Sugar-free ingredients are used in this dessert but that does not mean that it is “carb-free” or “calorie-free”. Sugar-free cookies and pudding used in this recipe do not contain added sugar but are made from flour, starch and other sources of carbohydrates. Read labels carefully when preparing sugar-free desserts.

This recipe comes to you from Chef Beth at Caregivers Kitchen.  It makes six 1/2-cup servings; each serving supplies 1 carb choice, 180 calories and 395 mg of sodium.

Essential Equipment
  • food processor or hand mixer
  • measuring cup
  • spatula
  • large zip top plastic bag
  • serving bowls or cups

Ingredients

  • 12 sugar-free sandwich cookies
  • 1 box (1.0 oz.) instant pudding, vanilla or cheesecake flavor, sugar-free, fat-free 
  • 2 c. skim milk
  • 4 oz. 1/3 less fat cream cheese, softened

1.       Place sandwich cookies in a zip top plastic bag and crush into small pieces. Divide half of the cookie crumbs between 6 cups or bowls.

2.       Using a food processor or hand mixer, blend softened cream cheese with ½ c. of the milk until creamy and smooth.

3.       Add the pudding mix and remaining 1 ½ c. milk, mix for about 2 minutes until the pudding has thickened.

4.       Divide the filling between the cups. Top with remaining cookie crumbs.

5.       Cover and refrigerate until ready to serve.
